Hi Jean, I'm sorry you're having issues with this recipe. We recommend proofing your dough in the warmest place in your house. I proof my dough in my oven with the light on (no heat), just make sure your remember to take it out before you start to preheat the oven. Also, the proofing time in the recipe is just a guideline, if your house is cold, it may take longer. The best thing to do is look for visual clues, like noticeably puffy and doubles in size, instead of following the times given. Hope this helps and happy baking!
