I have made this recipe several times and in each case, my dough never "doubles in size" as noted in step 3 of the published recipe. It looks exactly as it was when I put it in the bowl. I cover the dough with plastic wrap. Also, my star does not become "noticeably puffy" as noted in step 10. I cover the start with plastic wrap as well. I use SAF instant dry yeast and weigh each ingredient as noted in the recipe. Any ideas why this may be happening? Do I need to rise the dough and star in a 'warm' area?
