Mary, there are a few things that could cause leaky filling in this, and you're right that excess egg wash is one. If you're confident that you're being careful with that, though, our best guess is that your oven might not be preheated all the way. (Those beeps when it comes to temperature can sometimes be off.) Some folks find that refrigerating the star for 20 minutes before baking helps everything hold together a bit better. We'd definitely give that a go next time, as it's quite an easy adjustment.
