No worries, Ina. If bleached all-purpose and bread flour is all that's available, use that. Just keep in mind that different brands of flour absorb different amounts of liquid, so it's a good idea to hold back 1/2 cup or so of your flour and just sprinkle it in as needed. Happy baking!
