We find that rolling the dough out between parchment helps make transferring the dough into the pie pan easier, as it's fairly delicate and often breaks when you pick it up. If you don't have a coated parchment paper or your paper is thinner, you might try lightly flouring or greasing the paper to prevent sticking.
