You likely didn't do anything wrong, Cecilia! If it was a dry day it's possible it could have used a little more liquid. We've found it especially useful to mix gluten-free pie crusts in a stand mixer and that our Rustic Milk Pie Dough recipe (which was added to our site after this article was written) makes a fantastic and surprisingly easy to work with crust. It can be made gluten-free by swapping out the flour with our Gluten-Free Measure for Measure Flour. It too can be made in the stand mixer and it uses milk instead of water so it's super tender.
