Hi !!!! Thank you so much for this article!!!!, I have a question for you, I have tried Tangzhong and love it, so obviously I'm trying to combine this two methods, but had some trouble, the autolyse I think was too dry and formed clumps that were very difficult to dissolve, so after I read the article I was wondering if the tangzhong part would be considered a "liquid preferment" and should be included in the autolyse ???? Thank you !!!!
