Well done - nice process and clear results
I'm new to sourdough but love doing it
Tried my first autolyse - just flour and water - and was worried about the dryness of the mix (400gm flour, 230 gm water)
I use a liquid starter (equal weight of flour and water)
Good to see that adding the starter at the beginning is one outcome
I might experiment with half at the beginning and half at the end
The loaf was higher than anything I had managed previously
The dough was much easier to work with as well
I did forget to add the salt before kneading :)
But the taste was still fine with salted butter
More experiments!!
