Barb, I too have had concerns about the undissolved yeast granules after mixing in after autolyse. I am currently trying your suggestion to dissolve the yeast in held back water from the autolyse mix. Also, for autolyse I use relatively hot water 140+ F as I don't have to worry about harming the yeast and I hope to have some retained heat after autolyse to help they yeast development. It was not clear in your article, but after autolyse, I completely knead in the salt, then after that I completely knead in the yeast (last)... Is that how I should do it.. it seems to work fine.
