Hi Laurence, since adding the boiling water to the flour alters the starches and affects how water is absorbed and retained, I don't know how this will affect the autolyse process. While you could certainly mix all the ingredients after the Yudane has cooled and then allow the dough a 30-minute pause, I would not recommend trying a true autolyse, since the remaining flour might not properly hydrate without the additional ingredients.
