Hi Stan, thanks for reading! It sounds to me like those hard pieces you found in your bread were due to flour that wasn't fully hydrated during the autolyse. Unincorporated flour does tend to persist as dry bits throughout the process, so be sure to mix your autolyse enough so all the flour is moistened!
