I love how scientific this article is. I've been looking into autolysing because I don't have a stand mixer and I'm trying to find ways to shorten the hand knead time. In regards to KAF's "pillowy white bread" recipe, which ingredients should I incorporate together for the autolyse process (ingredients would be tangzhong, flour, dry milk, sugar, salt, yeast, whole milk, egg, butter)? From your responses to other comments, so far I've deduced: flour, tangzhong, whole milk, dry milk, egg, and yeast (and to add the butter and salt afterwards? what about the sugar?)- I'd love to receive your input, thank you!
