Hi Anne, I would definitely recommend adding an autolyse to your high hydration sourdough recipe! I did test a sourdough recipe above that calls for a stiff starter, but you can easily add an autolyse to your recipe if it calls for a liquid starter. If the hydration of the recipe is sufficient to completely moisten the flour during the autolyse without including the sourdough starter, then you can add the starter and the salt after the autolyse. Give it a try and let us know how it goes.
