Hi Barb, I have been making sourdough bread weekly for a year now. I have had great success but definitely find King Arthur bread flour gets the best results for me. I haven't ever done the autolyse method. I read your article but that was using yeast. Any thoughts on autolyse when using a high hydration recipe for sourdough?
