Hi Jan, I find that 3 minutes on "stir" on my KitchenAid, followed by an autolyse, then 2 minutes on speed 2 to knead the dough generally works well, but you can increase the kneading time a bit, if you feel it's necessary. If you incorporate the stretch and folds as you describe, your dough shouldn't require the kneading time after the autolyse; the stretch and folds should serve to sufficiently develop the dough.
