Hi Barb, In the past year I have done research in Autolyse in regards to making Pizza dough after all my attempts using King Arthur receipts all which I think are bad. Do you make pizza dough using the autolyse method? As a kid I made Pizza in our family restaurant for 10 years. As a senior I started to make them again with not much luck until I found the autolyse method and now I make the Best pizza ever at home using a simple pizza stone and home oven. I also found King Arthur bread flour to be the best, better then 000 flour. I think you have to share some of your experience with all those Pizza receipts that don't work. My pizza takes 6 1/2 min. to cook and cheese never burns. Have a Great Day
