Hi Deb, thanks so much for your kind words! Unfortunately, the autolyse method is really only for bread recipes. This wouldn't work in a cookie recipe because the recipe doesn't call for enough liquid to soak the flour. I do, however, have the perfect recipe for your sprouted wheat flour cookie adventures.
