I just tried autolysing a bit more than half the flour and most of the water. (2/1 bread flour/ww) After letting it sit covered for just over an hour, I added the remaining flour and other ingredients. (Some sugar, salt, instant yeast, seed mixture)
The resulting dough rose beautifully. It got a second short rise while preheating the oven and cast iron pot. It looks fantastic and is glossy with good maillard all around. Can’t wait to get into it!
