Barbara, Brilliant article! Will assist me greatly. Thank you so very much!! I too use autolyse with a combined stiff (25%) and liquid 75% SD starter. I have found mixing them together using 50 g of warm water and a danish dough hook works well. After autolyse, I just pour mixture on top of dough, then using the pinch method, mix to 78 degrees.
