Hi there, while I don't always do a true autolyse, I find the modified version (adding all the ingredients until everything is fully moistened, and then pausing for 20-30 minutes) works well with almost any recipe, and still yields very positive results. You'll end up with a dough that is easier to work with and requires less kneading time. Barb
