Val, I would recommend following the recipe as written. While I'm not familiar with this particular recipe, it sounds like the man has a plan and may have modified the autolyse to include the yeast and salt for a particular reason. It's always worth following the recipe as written the first time you make it, otherwise you won't have a basis of comparison. Barb
