Hi Val, a "sponge" is a type of preferment that typically includes flour, water and yeast (or sourdough starter). It's really more about beginning the fermentation process and (depending on the length of time) developing more flavor in the bread. It's true that this type of preferment may contribute some of the same benefits as an autolyse, but the inclusion of yeast or a sourdough starter distinguishes it from an autolyse. Barb
