Rae, yes, you can use the autolyse method with almost any bread recipe, but the benefits are especially noticeable when working with sourdough breads because the acidity of the dough tends to work against extensibility. You'll also notice quite a significant difference in kneading, shaping and baking when you include an autolyse with wholegrain bread recipes. Barb
