Great question, Pierre-Paul! I've read that a warm autolyse is more beneficial than a cool one, but I wanted my final dough temperature to be in the 75-78 degree range, so I went with 90 degree water. You could go a little warmer if you're planning a long autolyse and your kitchen is cool.
