I hadn't really thought about using this method with a bread machine, Gene, but I think it would work fine to mix the flour and water together by hand and let it rest in the machine for 30 minutes or so before adding the remaining ingredients and turning on the machine. Be sure to reserve about an ounce of water to add with the yeast or sourdough starter and other ingredients after the autolyse-this should allow the remaining ingredients to incorporate well. If you plan to allow the dough to go through the baking cycle, the benefits of using an autolyse may be minimal. You'll notice more of the benefits of an autolyse if you use the dough cycle and finish off shaping the loaf by hand and baking it in your oven. Barb
