Fantastic information, Barb! Your blogs are always so interesting. Have you tried autolyzing using a Zo bread machine? Will it work and, if so, how long a pause after the bread and water are mixed? Do you believe the rest of the ingredients will mix thoroughly after the pause? Finishing by hand isn't an option with a torn rotator cuff in my case but I love my Zo!
