I use a 10 minute autolyse with all my bread production, using a regular starter, but add the salt(sprinkle method) after a 10 minute rest. This seems to give great spring to the loaves with whole wheat, 7 grain cereal, sunflower seeds and pepitas. I bake with this method except when incorporating rye flour.
