Hi Ann, Happy New Year and thanks for reading! I think this Classic 100% Whole Wheat Bread recipe is a great place to apply the autolyse method. The recipe already calls for a "mix and pause," but if you wanted to add the yeast and salt later, just be sure to save about an ounce of the water from the autolyse to help dissolve the yeast. Adding some sort of a pause to whole wheat recipes is always a good idea!
