Love working with enzymes in research. The magic of DNA cloning. I autolyse for 30 minutes when I bake bread. I like the texture so much more. I think students that go into research should read your wonderful detailed article. Perhaps they would have a better understanding on how enzymes work on multiple levels. Scientific research and baking have SO much in common. Maybe someday I'll write an article comparing the similarities of the two. Thank you for your hard work.
