Barbara, great experimentation and thank you for sharing with us. So very interesting. I was thinking this might improve my pizza dough. I am going to give the flour, water, olive oil and honey a 30 minute pause after incorporating with the mixer on 2, and then add the yeast and salt and finish the knead/mixing. I will use my KitchenAid mixer to mix the dough.
