Hi Miranda, thanks for taking the time to share your baking success with us. Isn't it a great feeling to bake something that should be chock-full of dairy and make it entirely dairy-free? The texture of this breakfast cake is one of my all-time favorites: almost like a cheesecake married a soufflé. It's delicious!
