You can use your favorite plain, unsweetened non-dairy milk and add 1 tablespoon of lemon juice per cup of milk to recreate the slightly tangy flavor of buttermilk. We also like using plain soy yogurt and adding lemon juice to create a thicker, more sour mixture. If you're looking for an assertive flavor, choose the latter option.
