Hi Steph, store bought pie dough is definitely a bit more challenging in terms of applying these tips, since you can't adjust the ingredients or the consistency of the dough, but you can still provide good vents in the top crust, and for some types of fruit pies at least partially cooking the fruit prior to baking the pie should also really help avoid the gap.
