When I preheat my oven for 40 min, I preheat my foil lined pan placed on the lower rack. Parchment will burn-lesson learned when the house smelled of burning paper. Rim cover goes on @ 15-20 min. Loose foil cover over pie when top slightly brown @ 35 min. & turn the pie if you have a hot spot in your oven. Top will continue to brown slower under foil. Make sure you add 10 min to bake time when bubbling starts to completely activate thickeners. Perfect bottom & top browned pie. Hope this helps :) Lisa
