Simple trick to get rid of pie gap. When you first take the pie out of the oven , cover it with aluminum foil for a good 10-15 minutes and then just before you remove it , press down on the crust with both hands slowly. The crust will conform to the filling every time.I like to bake my pies a bit longer because we like the apples cooked down more for a softer filling. Off to make a dozen or more pies to freeze for the winter.
