I always pre-cook my fruit filling before I make a pie. I don't use the stove top, I use the microwave. For apple pie, I mix 8 cups of apples, the sugar, spices, and Instant Clear-Jel and microwave on high for about 8 minutes or so (depending on the type of apple and how ripe). I let the filling cool and then either fill a pie crust or freeze the filling. I know exactly how thick the filling will be and I can adjust the sugar / spices before I fill the crust. I love having all of those bags of apple filling in the freezer. One thing, I am careful not to over cook the apples when I microwave the filling.
