Hi there, Shari! You sure can make one loaf without apples if you'd like! We haven't tried baking the loaves in pain de mie pans but we don't see why you couldn't, we'd recommend checking on them a bit sooner than listed in the recipe as they likely won't take as long to bake. Enjoy!
