While we haven't tried that ourselves, we suspect it would be possible, Danie. Liquid sweeteners thin the consistency of a filling (like this or in a pie), so you'll want to increase your thickener by 10% to 25%. It's also worth noting that honey is sweeter than sugar, so we'd use a couple tablespoons less of it, and we'd take care not to let the mixture sit for too long without stirring, as honey can scorch at high temps.
