In the Straight Blade section, it looks to me like you are holding the razor edge PARALLEL to the bench rather than perpendicular. Then I see in the comments to only touch the dough with the corner of the razor. That's not holding the edge perpendicular to the bench, it would be more like holding it at an angle, like maybe 45 deg.
