I made sourdough bread by mixing part of flour and water and starter overnight, then in the morning I added more flour, the salt an more water then rested again, every hour I would stretch and pull and let it rest again 1 hour and after 6 hours I shaped and put in fridge for 3 days to 4 days. The dough raised some in fridge but not much. After I let them sit out on the 4th day for 4 hours I then scarred them and they deflated in middle only. I sprayed them with water and put them in oven on 400 for 55 mins untill they reached 207, one was in a glass bowl with top and one in a bread pan, both got to 207 the same time. They came out beautiful!!! I was really worried after seeing people with deflated issue.
