It seems like there may be some confusion from our wording, Marlene — apologies. To prepare your starter for use, make sure to feed it the night (or 4-8 hours) before, so it's nice and active and ready to use when you're ready to mix the dough. You'll then use 8 oz of your fed starter in your recipe in place of the overnight starter. The remaining starter should be fed again before going back to rest in the fridge (or on the counter if you keep it there). More questions?
