Hi Meg, from other Kahlua recipes I've looked at, the 3-hour simmer time seems to be a common requirement, even when making smaller quantities, so I suspect where you went wrong was cutting the simmer time. The crystallization was most likely a result of the syrup not being reduced long enough.
