Hi Norma, as PJ points out, cookies can be especially tricky when it comes to reducing sugar. If you reduce the sugar by 25%, you're likely to get a thicker, less crispy cookie. Check out this more detailed blog post for more information on how to reduce the sugar content in cookie recipes.
