For this method, I would recommend removing the lid about 25 minutes into the bake. If you happen to be baking in a ceramic pot and you've chilled the dough overnight in the refrigerator, I would allow about 45 minutes for the dough and pot to acclimate at room temperature before putting them into a preheated oven.
