Hi Nicole, since ovens vary quite a bit in how long it takes for them to preheat, I believe the 25-35 minutes refers to the remaining baking time. My preference when using this method is to simply remove the lid about 30 minutes from the time you put the bread in the oven, and continue baking without the lid until done.
