Hi Anu, it's generally fine to slash the bread right before baking, unless the dough seems very delicate and likely to fall. If that's the case then you'd be better off skipping the slashing step. It does sound like the mixture you substituted for the harvest grains blend might have absorbed a lot of liquid, causing you to need to add extra. However, I'm not quite sure which recipe you're making, so I'm not sure how to advise about adjusting the salt and adding sugar.
