Thank you, thank you, thank you for this article on cold-start artisan bread baking. I have an Emile Henry ceramic dutch oven that I want to use to bake bread, but I also don't want to destroy the pot by preheating it empty. I even wrote to the company, and it DID NOT suggest a cold start, so I've been holding off with the bread making, thinking it's not possible or desirable to use a ceramic dutch oven instead of a cast iron one. Your article showed me otherwise. Can't wait to try the recipe.
