I use the no knead bread recipe and do a 2nd rise in a banneton. when ready to bake I pre heat the oven and transfer the dough from the banneton to the parchment lined cold Dutch oven. following the baking time in the recipe the loaf is only half cooked by the time the 1st 45 minutes (30 min with lid, 15 min with) temps @ around 140F. Put cover back on, baked another 30 minutes and 15 without, temped @ 200 at completion.
Sound about right?
