Hi Catherine, cast iron Dutch ovens are perfect for baking bread. While I cannot vouch for your 100-year-old Dutch oven, you can bake using either the cold oven method or the preheated oven method when using modern Dutch ovens. If you know the manufacturer of your oven, I would try to contact them to see if they have temperature recommendations.
