Thank you Morgan for your answer. I just made a new bread and yes, helas, it has been in the kitchen for somewhat more than 2 hours. Although we are in winter, it might be too long. So the next batch will follow the rules exactly! By the way, do you think it might be the cause of the difficulty of cutting the bread too? The crust is thick and the bread is very tender. Luckily it tastes fantastic still.
